Artichoke Hearts in Lemon Butter
Ingredients:
- 3 tbsp. lemon juice
- 2 tbsp. butter
- 2 15-ounce cans of artichoke hearts
- ¼ teaspoon grated lemon rind
- 1 tbsp. oregano
- ¾ cup chicken broth
- 1½ tbsp. salt
- ½ crushed clove garlic
- ½ cup minced onion
- Sauté garlic and onion in butter until transparent
- Add artichokes and broth
- Add oregano, salt, lemon juice, lemon rind
- Simmer 10 minutes
Note: 2 packages of cooked, frozen artichokes can replace canned artichokes.
Yield 6 to 8 servings.
